Anyone Doing Their Own Catering?

My FI and I are doing our own catering. We are getting married in the summer and are just serving cold foods...(meat trays, pasta salad, etc..) I am having several of my students (I am a teacher) come to make sure that the food is filled up etc. Anyone else doing this? Helpful hints or ideas would be great. Also...any easy food suggestions would be great.

I am also catering my own wedding.it saves a lot of money.i am serving gravy meatballs,bbq lil smokies,hot dogs,sandwiches,jambalaya,and white beans and rice.my mothers friends and my aunt are serving the food. Hope this helps.good luck

Here are some simple easy things you can make ahead of time;

1. Buy blocks of cheese from a warehouse like sams, or bj, cut into tiny blocks put in ziplock bags and refrigerate; can be made up to a week ahead. Then on the day of the event , get a tray, put the small blocks in the center, and surround with crackers.

2. Deviled eggs; you can make them a day or two ahead. Make the mixture adn store in a container in the fridge and place the empty whites in a container, when ready to serve, place on trays and fill the whites with teh mixture. I found this saves alot of space in the fridge than assemblying them before hand...

3. Make ur own strawberry shortcake; i saw this idea at an event and absolutely loved it. The person had plan sponge cake cut into squares, than she served cool whip in a huge bowl next to it, another bowl had fresh strawberries, another bowl had strawberry filling (the kind used for pies, etc.) than people were able to make their own cake. It suits all those health nuts, because they like to take either just fruit or a small plain piece of cake, and for those of us who enjoy more more more, we cna pile the cake with a ton of whipped cream...

Providing that the students are over 16 yrs of age, you can pay them minimum wage, marked as compensation.
