Wording Invites

I would like to invite a lot of my coworkers to my wedding but I do not know their spouses name. Should I send around a generic email to the invitees requesting their spouses name or just address the invite - Mrs Joan Smith and Spouse? Or should I just address the invite to Joan and then on the reception card put Joan and Spouse?

I think it should read To Mrs. Smith and Spouse or maybe Mrs. Smith plus one.

Ask each of them their spouse`s names and then address each envelope in the appropriate form of "Mr. And Mrs. John Doe".
