How Best To Do This Kind Of Event?

I`m not familiar with doing events at certain business locations, so please excuse my ignorance.

I have a very large group of singles in the city that I coordinate and come up with fun events, workshops, speed dating, etc. What I`d like to do is have a once a week event at some local place in the city, like bowling, ice skating, roller skating, mini-golf, etc. But, to cover the cost of advertising I need to make some profit on these events.

I initially thought about just trying to get a business to pay me to hold the event at their place, because if it were on a weekday they`d be getting a bunch more business than normal. But, I`d like it to be reserved just for us.

How is that normally done? And what would you recommend? Renting out the place and just have the people pay me? Or reserving the entire business to have a special night and maybe I get part of the profits? It seems that most of the profits would go into concessions and stuff so I`d need a percentage of that, too, right instead of just renting out the place and getting entry fees? Or could I get a good rate on the rental BECAUSE they`d be making so much on concessions?

A lot of people will come to socialize but won`t skate or bowl or whatever so wouldn`t want to pay for those things, but they`ll be eating. Or is it more common to just have a rented place so people could just pay me an entry fee (whether or not they bowl, skate, etc) and the place allow them unlimited access to the stuff (instead of paying for shoes, paying by the game, etc) but they`d get the concession profits (which would be the big draw for them)?

Also, does that mean we couldn`t really do it on a friday or saturday night? Because I`d assume it wouldn`t benefit the establishment much since they`d be getting a lot of business anyway. I doubt they`d allow rental or reservation of an entire facility on the weekend, they`d be forced to turn people away. But, I`d much rather do it on a weekend since that`s when singles feel the emptiness of not having a date. :-/

BTW, in case it matters, I`m not planning anything at these events, it`s just bowling or skating. No other activities planned or anything.

And, because this is going to be my job I need to maximize my profits.
