I was in the same boat as you: For my daughter`s Quince (scheduled 8-23-2003), we have narrowed it down to the following:

4 to 5 pm church:
As the court enters we will play: I will bow to you (beautiful christian song- Above all CD)
In the service itself after her dedication we will play : Yes I believe (point of grace)

After dinner is served by 7 pm: we will begin performing the changing of the shoes from flats to heels- then she will dance her Father/Daughter dance to "Butterfly Kisses" edit time version, but we are still undecided.

Then after her dance with her father- we will introduce the Honorary Padrinos and family- dancing to Vals de la Mariposas. Introducing her escort at this time...

Once they are done- we will focus at presenting the honorary court. They will enter to: Balada para Adelina where they will hand her 14 long stem roses- the 15th coming from her escort.

Once they are in their position they will begin their Vals to: Tiempo del Vals , we will extend the song to create a 7-10 choreography presentation.

Once this is done this will lead us to the cutting of the cake: which will have: las mananitas playing
Once this is done this will roll into the brindis (toast)with a soft background music playing ( haven`t decided yet) and an opportunity for guest to say a few words for the Quince.

By this time it should be close to an hour later ( no more than 1 hour 1/2 ) and then she will say her speech and we say ours then the dance will continue.

Now granted this is if everything goes as plan... I BELIEVE IT SHOULD.

Hope this helps!

My final suggestion is to make it flow as easy as possible, from experience going to Quinces dead time is a party downer with many quest leaving. This is why I wanted each event roll into the next from start to finish. Since we created the church ceremony (its not the typical Catholic Mass) we had to reflect my daughters desire to stress the importance of her committement so that is why she chose these songs.

If you get a chance try to hear the songs I listed ( I heard them on Kazaa)

Good luck!
