Manhattan Venue Set-Up

Looking for help with weddings in Manhattan. Must be good with menus, vendor negotiation, etc. Should be able to sit down with a menu like this: http://menukarma.com/menus/menu-for-top-of-the-tower-in-new-york-city and put together a proposed menu and per-head cost.
