Suprise 21st Birthday For Boyfriend-Help?!?

Hi, I want to plan a suprise party for my boyfriend`s 21st birthday. I was thinking a spanish theme with maybe some belly dancers or something. Any ideas on decorations or anything, and locations in eastern long island? I want it to be at a catering hall.
