Green/Environmental Weddings

Has anyone explored green weddings?

My ideas: organic flowers, organic food, low-on-the-foodchain food (a friend had vegan Indian food that was probably the least resource-intensive environmentally and financially and best tasting and most interesting catering I`ve ever had.)
