Cupcake Cave In
Why are my cubcakes caving in? Did I over mix? I thought that only happened also if you open the oven door while they are baking, which I didn not do either. I`m puzzled.

Avoid bubbles in the batter. To prevent air bubbles in the cake, slowly pour the batter in one corner of the pan and allow the batter to slowly flow in and around. Gently tap the filled pan on the counter a few times, this will make the air bubbles/pockets rise up and away from the outside of the cake. Also, spread the batter around with a spatula (yes even in a cupcake pan). They should be light and fluffy, not heavy which I am guessing is why yours is caving. Add pudding to the mix, it makes it fluffy and moist. I got that tip from Paula Dean.
