Wedding In Maui, Hawaii

My partner and I are a couple from New Zealand and planning to get married in Hawaii. It seems so hard thou, because i am not there, and not even in the USA. After getting quotes from wedding planners, it seems so expensive, but we do not want to give up our wedding dream. Can anybody suggest anything? maybe a private nice property for an affordable price, maybe a photographer. Also another question if anybody visited Hawaii, I will be 2 month till my 21st when I get married, does it mean I can not even have champagne on my wedding day? How strick the law is in Hawaii (Maui). Thank you a lot for your help.
