No, you do not have to have the church ceremony. Most non-catholics do not.

By the way, the tradition were the pastel colors. Personnally, that is my favorite. Like I said before, there is not a right or wrong way just as long as you the "Quinceanera" understands what it symbolizes. I think every quince should celebrate their 15th with their own personality in mind. It does not have to be like everyone elses.
