Hi, We`re having a pig roast tomorrow our selves, and we`ve been told to propare about half a pound per person attending, also, we decided to make it a pot luck, every one brings a salad dish. That way theres less to worry about.
The Pig should be cooked until it`s shoulder temperature is 170degrees.... It takes about 12 hours to cook on a rotissary, ours is propane.
Another tips is to not open the lid!! everytime it is opened it adds 20 mins to the cooking time, so don`t let guest open it for a "peeK"
As for sauces... Nothing is better then alowing guest to do it them selves... We have thought and asked around about things to poor on it, or inject... But the answer we got most is bbq sauce on the table and apple sauce.
Hope this helps!
