Cutting Rolled Fondant Icing

I have made over 100 wedding cakes over the years. Have been out of it for a couple of years now. I made one rolled fondant cake for my daughter`s bridal shower. It was beautiful, but my butter cream icing is much tastier. I am making my niece`s wedding cake in August and her shower cake in a couple of weeks. She wants the pretty stacked gift boxes with bows. I am going to make these for her, but I think after reading all of the recent messages I will ice with butter cream ( I have had a lot of luck with smoothing this icing nicely in the past) but will attempt to make the stand up bows out of the rolled fondant. Any suggestions on this gift box cake would be appreciated. Also, I was wondering about how people cut the rolled fondant icing, is there a trick to it. It seems to crack...just wondering
