Mambo #5 sounds good and you can do alot with the rhythm. Imagine the guys with canes dancing this song. Another idea is to have a popular song from the Kumbia Kings.
Regarding the question about the surprise dance. Basically, people expect the entrance song, the dance with the Dad, the last doll, dance with her escort then dance with her court of honor. The surprise dance is just that. The guests will not know what to expect and are pleasantly surprised . Some like to have a cumbia, others regueton, country line dancing, 60`s theme, samba, cha cha cha, salsa. It is usually a fast song with fast movements. Lots of fun to watch!
