Birthday Party For A 30-Yr Old

My husband is turning 30 on October and I`m planning to have a huge birthday bash for him. I thought up a great idea to pop out of a birthday cake just like Jessica Simpson did for her husband on HIS 30th birthday...so I`m doing that, but what else can I do? I don`t really want to have just the cake, food, and drinks...is there anything that I can do to liven it up? My friends are all into playing poker and I get bored with that since I don`t gamble. I don`t want his birthday to be another cards session - I want it to be special and entertaining. If I hire a coordinaot or an MC is that doing too much? Help!
