Kosher Destination Wedding

My finace and I would like to get married at a destination location, however we are having a hard time finding a place that can do a kosher event. We have contacted some cruise lines, travel agents and resorts but we are just not having any luck. We are not thinking mainland Canada/US but rather Carribean, Mediterranean, etc..

If anyone has any ideas at all, that would really be appreciated.
